Every year from November to April, Mugaritz—San Sebastián’s world-renowned, Michelin-starred restaurant—closes its doors, not for rest, but for reinvention. Under the daring vision of chef Andoni Luis Aduriz, the inventive culinary team embarks on an ambitious challenge: to develop and curate an imaginative, brand-new, 20-plus-course menu that will surprise, provoke, and potentially even unsettle its diners. Director Paco Plaza and cinematographer Adrián Hernández takes us inside this creative crucible, where bold ideas and spectacular failures coexist in the pursuit of culinary art. Guided by the year’s theme, Lo que no se ve (“What Cannot Be Seen”), Mugaritz’s creative and highly skilled staff explores the boundaries between gastronomy and science, tradition and experimentation, cuisine and performance. The result is a fascinating, fly-on-the-wall portrait of visionary risk-taking, where food becomes not just nourishment, but provocation, artistry, and radical reinvention.
